Very Vegan Cranberry Relish

Turkey day is around the corner so it’s time for the sides to shine this year. Many many years ago, the pilgrims decided that cranberries will forever be on thanksgiving tables for Americans. Because of that, we have to create innovative ways to incorporate cranberries into our thanksgiving meals. This is an easy and delicious alternative to that gelatinous cranberry cylinder that comes out of a can.  Start with about a pound of fresh cranberries. Add about 2 tablespoons of fresh orange juice, half a cup of brown sugar, and about 1/3 cup of light agave syrup. Combine all the ingredients in a non-stick skillet on medium-high for about 13 min and the cranberries will begin popping like popcorn. It’s quite cool. Then stir, let it reduce, and you will get this jelly-type texture. Add lemon zest if you want a little more tang and citrus. Enjoy.
