The Corn Identity

Corn. What a versatile veggie. And a delicious one at that. Here’s how you make this yummy beauty. Purchase a few ears of corn, and remove the leaves. Boil enough water to cover the corns you bought. Once the water is boiled add the corn and add about a cup of whatever milk you have in the fridge. I sometimes use half and half. After 10 minutes the corn should be tender and ready. While your corn is boiling away, in a non-stick skillet melt some butter and extra virgin olive oil. 3:1 butter to oil ratio. Add about a tablespoon of minced garlic, a splash of brown sugar and some green onions. Once they are smelling outrageous add the corn. Before that try to break or cut the corn into desired bite sized pieces if you want. Then add the corn to the pan and once it gets caramelized on each side, grate some parmesan cheese on top and cover with a lid so the cheese will smoothly melt all over.  This is an impressive side dish.
