Faux Pad Thai with Mmmahi Mahi

Seared mahi mahi over faux pad thai

This one was a winner! Let’s start with the fish. Pan seared mahi mahi that was drenched with fresh lemon juice, some lemon zest, fresh italian parsley, and fresh basil. Add a splash of salt, pepper, and a sprinkle of old bay seasoning.  Now for the faux pad thai. Start with angel hair rice noodles in boiling water for about 3 minutes. then take them out and splash with cold water to stop the cooking. While you were doing that clean and julienne some portobello mushrooms, and chop some zucchini. Then add the noodles to the pan along with some soy sauce, hoisin sauce, and I have the amazing powdered peanut butter. Its essentially peanuts that were blended to powder form. I also do that with raw almonds in a magic bullet. Add the powdered peanuts and almonds to the pasta. Play around with the flavors and constantly taste while you cook. Enjoy
