No Joke Roasted Artichoke

Healthy and delicious

This recipe is excellent and super impressive to the amateur eye. Buy a few whole artichokes and wash them. Cut the pointy top off so the artichoke opens like a semi-blossomed flower.  Then cut them into quarters like so. Place on a non stick baking sheet and drizzle with extra virgin olive oil, salt, and pepper. Cook in 375 degree oven for about 12-15 min until they look like this. garnish with parsley and truffle oil if you want to be fancy like me.  Eat and enjoy.
